At Paolo’s Table – Paolo’s Kedgeree

You may be surprised to learn that Paolo is a keen chef; when he is not working wonders with interiors, you’ll most likely find him in the kitchen cooking up a storm. This is one of his favourite recipes; Kedgeree.

You will need:

  • 3 eggs
  • 1 shallot
  • 2 teaspoons of curry powder
  • 1 teaspoon of cumin
  • 300g of rice
  • 1 haddock
  • 3 bay leaves

Instructions:

  • Start by hard boiling 3 eggs for 4/5 minutes. Transfer to cold water and peel
  • Chop 1 large shallot and cook it in a pan with olive oil
  • Add 2 teaspoons of curry powder and 1 of cumin
  • Add rice and after 1 minute add the chicken stock to cover
  • Simmer for about 10 minutes and leave on the side covered 
  • Poach the haddock with milk and 2/3 bay leaves season well
  • Let it cool and break in pieces removing the skin
  • Add the fish to the rice and the eggs on top
