You may be surprised to learn that Paolo is a keen chef; when he is not working wonders with interiors, you’ll most likely find him in the kitchen cooking up a storm. This is one of his favourite recipes; Kedgeree.
You will need:
- 3 eggs
- 1 shallot
- 2 teaspoons of curry powder
- 1 teaspoon of cumin
- 300g of rice
- 1 haddock
- 3 bay leaves
Instructions:
- Start by hard boiling 3 eggs for 4/5 minutes. Transfer to cold water and peel
- Chop 1 large shallot and cook it in a pan with olive oil
- Add 2 teaspoons of curry powder and 1 of cumin
- Add rice and after 1 minute add the chicken stock to cover
- Simmer for about 10 minutes and leave on the side covered
- Poach the haddock with milk and 2/3 bay leaves season well
- Let it cool and break in pieces removing the skin
- Add the fish to the rice and the eggs on top
