You may be surprised to learn that Paolo is a keen chef; when he is not working wonders with interiors, you’ll most likely find him in the kitchen cooking up a storm. This is one of his favourite recipes; Autumn Apple Chicken
You will need:
- 4 chicken breasts with skin on
- 8 shallots
- rosemary sprig
- 1 garlic clove
- 2 apples cut in half
- 1 cup apple cider
- 1 cup chicken stock
- salt and pepper
Instructions:
- Preheat oven to 180 degrees
- Start by melting butter and olive oil in a large oven proof casserole pot
- Brown the chicken all over and season well, then move it to a plate
- Chop the shallots, rosemary and garlic and cook in the same casserole in the buttery juices
- Add the half apples and caramelise on the edge
- Return the chicken to the casserole, add the cider and stock, cover and cook for 30 minutes in the preheated oven
- Remove the pot from the oven and drain ingredients to a plate and cover with silver foil leaving the liquid
- Add the cream and reduce to a thick and intense sauce
- Pour the sauce over the chicken and serve immediately with some roasted potatoes or a fresh lamb lettuce.
